Chinese Food in America: This exhibition will trace Chinese Immigration to different parts of the country and examine the differences in representations of Chinese food across America. It will also look at the ways in which Chinese cuisine changed from its homeland to tables across America due to available (or unavailable) resources, fusions, and changing generations. *This exhibition can be used as a model for other “ethnic” foods highlight exhibitions.
Health Conscious America: The History of Dieting in America: This exhibition will cover this history of diets in America. It will also touch on issues of fad dieting, eating disorders, etc.
Farms, Factories, and the Food They Create: This exhibition will trace the history of modern farming (meaning the use of machinery) as well as the history of mass production of food in factories.
